I’ve been a little busy,and this little one in the picture is one reason. On March, 4 I became GiGi, thanks to my beautiful Step-Daughter,and Son-in-Law. Addison came in to this world March, 4, at 4:24pm at 6lbs 10…..My world has changed, right along with a lot of people that love her……

Ok I know it’s really not lowcarb, but this is what my family requested today. A big pot of Chili! The only thing that is not lowcarb is the beans, but beans have a lot of protein, so really this dish is diabetic friendly. I didn’t eat a big bowl, but I did eat some, and boy was it good.

Well here it is 2010. Does anyone really remember where they were in January 2000? Can you even remember the last 10 years? There was a lot that happen to me in the past 10 years,and most all great really, but it is the little things we forget. I wished I had a blog 10 years ago, or for that matter kept a journal. That will change today. I’m going to try to put something down everyday that I did for that day. I know your thinking ( boring) but maybe I can look back in 10 more years, and say YES I remember doing that!!!! At the top of the blog page will be where you can click Chic’s Journal.

I hope everyone has had a great Christmas this year. I will have to say for me it has been different. We broke all traditions when it comes to Christmas. First I had to work,so we really are doing Christmas Sunday with all the kids, but my Grease Monkey” AKA Hubby,and my Son talked me into opening presents on Christmas Eve. I do think the girls were a little upset, but they will be here Sunday. They have turn into adults, and moved away. ( SAD) .I’ve added just a few photos to share with you. Enjoy the rest of your day.

Something I can’t have”Pecan Pie” Someone brought one to work for our work Christmas party ( Why does people want to be so mean to me?…I love Pecan Pie. I’m actually working on a sugar-free, carb friendly pecan pie. I hope it turns out good, and I can share.

I love these, but most people do not. I say just try them once. I will say when I was making them,and taking pics I was HUNGRY. This recipe is so easy,and your kids could make this. The fact a green veggie is good for us is scary for most but even my Grease Monkey loved it ( AKA Hubby).

Hmmmm!! What do you do with all those leftovers from Thanksgiving??? Nothing!!! You go buy you a can of chicken and you make this sandwich is what you do. I hardly ever have leftovers. I did have some ham this year,and I guess you could use ham for this recipe also. For something so quick,and most the time we all have this stuff in our pantry. This is one of my favorite snacks. I use to put green grapes,and pecans in this. I got that from a good friend of mine years go, but since we all know grapes is VERY sweet. I had to take this recipe in a new direction. Yet another recipe for the almighty Cauliflower. Ok!!!! I know this recipe is to easy, but boy is it good. I think this will be a great Thanksgiving recipe for years to come. You know I must be slacking. I did not buy any sugar-free candy this year for Halloween. Hmmmmmm!!! Could I be over my sweet tooth…LOL
